Bourbon Bacon Jam
About six 1 tbsp portions
ingredients:
- ¼ lb bacon, fine dice
- ½ large sweet onion, fine dice
- 2 tbsp bourbon
- 2 tbsp maple syrup
- 2 tbsp brown sugar
- 1 ¼ tbsp apple cider vinegar
- ¾ tsp paprika
- In a medium saute pan over medium heat, render fat from the bacon until crispy. Remove the bacon bits to a paper towel and retain approximately 1 tbsp of bacon fat in the pan.
- Add the onion to the hot pan and reduce heat to low. Cook onions stirring often until very soft and slightly browned.
- Add the bourbon and allow the alcohol to evaporate — light the vapor if you like!
- Add the rest of the ingredients and mix well, then continue cooking over low heat until the contents of the pan have thickened.
- Remove the jam from the pan into a half-pint mason jar. Allow to cool then lid and refrigerate.
