Italian Dressing
2 cups of dressing
ingredients:
- 2 Tbsp champagne vinegar
- 3 Tbsp red wine vinegar
- 1 Tbsp white sugar
- 1 tsp kosher salt
- 5 Tbsp grainy mustard
- 1 clove garlic, rough chop
- ¼ red bell pepper, rough chop (about 1 to 2 Tbsp)
- 1 shallot, rough chop
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp red pepper flake
- ¼ tsp black pepper, freshly ground
- 1 cup olive oil
- Combine all ingredients except olive oil in a 2 c measuring cup. Puree with an immersion blender until smooth.
- Continue to run the blender while drizzling-in the olive oil.
- Once emulsified, transfer to a jar and enjoy,
Many Italian dressings out include semi-dry cheeses like parmasan, asiago, or romano. Finely-crumble and add those ingredients after blending.
