Bourbon Bacon Jam

Grown-up grilled cheese: honey turkey, muenster cheese, and this bacon jam on buttered sourdough. No, the bacon jam is not optional.

About six 1 tbsp portions
ingredients:

  • ¼ lb bacon, fine dice
  • ½ large sweet onion, fine dice
  • 2 tbsp bourbon
  • 2 tbsp maple syrup
  • 2 tbsp brown sugar
  • 1 ¼ tbsp apple cider vinegar
  • ¾ tsp paprika
  1. In a medium saute pan over medium heat, render fat from the bacon until crispy. Remove the bacon bits to a paper towel and retain approximately 1 tbsp of bacon fat in the pan.
  2. Add the onion to the hot pan and reduce heat to low. Cook onions stirring often until very soft and slightly browned.
  3. Add the bourbon and allow the alcohol to evaporate — light the vapor if you like!
  4. Add the rest of the ingredients and mix well, then continue cooking over low heat until the contents of the pan have thickened.
  5. Remove the jam from the pan into a half-pint mason jar. Allow to cool then lid and refrigerate.
