Chocolate Chip Shortbread Cookies

Yields 24 cookies.


  • 2 sticks unsalted butter (room temperature)
  • ½ cup sugar
  • 2 cup flour
  • ¼ tsp salt
  • ½ cup mini chocolate chips
  1. Preheat oven to 350°F
  2. In a large bowl, mix the flour and salt.
  3. With the paddle attachment on your mixer, cream the sugar and butter.
  4. Slowly incorporate the dry ingredients.
  5. Fold-in the chocolate chips, then form into flat disc in plastic wrap and cool.
  6. Roll the dough to a height of at most ½ inch. Cut into 3 inch rounds; apply an egg wash and large-crystal sugar if desirable.
  7. Bake until browned at the edges, about 20 to 25 minutes. Remove and cool.
