Ham Spread

As a kid, every once in a while a tub of slightly shaggy-looking pink spread would appear in our fridge. It would get smeared on crackers or buttered English muffins and disappear pretty quickly.

This magical stuff was ham spread, and it was usually purchased at the local farmer's market by my grandmother (to my recollection). After an Easter ham dinner one easy application for leftovers is making a batch of that stuff. While it's basically a more finely-processed version of ham salad, most recipes I see online are just too complex. Ham spread is about appreciating the hammy-ness and not masking it. In the spirit of helping others enjoy (and employ) that leftover ham, here's my recipe for Simple Ham Spread.
