Honey Mustard Dressing a'la Melting Pot

I'm not a big fan of the Melting Pot restaurant. You know the joke: if I'm spending money on dinner out why would I want to have to cook it for myself? My favorite part of the "Big Night Out" menu is the salad, most especially their house dressing. Years ago I read that the secret to its being not just another basic honey mustard dressing is orange juice.

ingredients:

  • 2 tbsp smooth Dijon mustard (e.g. Grey Poupon)
  • 2 tbsp honey mustard
  • 4 tbsp extra-virgin olive oil
  • 4 tbsp apple cider vinegar
  • 2 tbsp orange juice
  • 2 tbsp honey
  • 2 tbsp granulated sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • black pepper, ground (to taste)
  • 1/8 tsp xanthan gum (optional)

The orange juice is best freshly-squeezed — in which case the zest can be harvested and added to the dressing, as well. If you don't have honey mustard (I had Heinz on hand when I made this recipe) just substitute 1 tbsp traditional yellow mustard and an extra 1 tbsp honey.

  1. In a small bowl whisk together all ingredients except xanthan gum.
  2. Optionally add xanthan gum and whisk well. Allow to rest in refrigerator for 15 minutes before serving.
