Honey Mustard Dressing a'la Melting Pot

ingredients:
- 2 tbsp smooth Dijon mustard (e.g. Grey Poupon)
- 2 tbsp honey mustard
- 4 tbsp extra-virgin olive oil
- 4 tbsp apple cider vinegar
- 2 tbsp orange juice
- 2 tbsp honey
- 2 tbsp granulated sugar
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- black pepper, ground (to taste)
- 1/8 tsp xanthan gum (optional)
The orange juice is best freshly-squeezed — in which case the zest can be harvested and added to the dressing, as well. If you don't have honey mustard (I had Heinz on hand when I made this recipe) just substitute 1 tbsp traditional yellow mustard and an extra 1 tbsp honey.
- In a small bowl whisk together all ingredients except xanthan gum.
- Optionally add xanthan gum and whisk well. Allow to rest in refrigerator for 15 minutes before serving.
